Recipe: Wimbledon Strawberries, Coconut & Cream

As Wimbledon draws to a close, our friends at Rude Health have shared their recipe for this delicious, seasonal dessert with us – super simple to prepare and perfect for a balmy London evening!

 

Wimbledon Strawberries, Coconut & Cream
Serves 4 (200ml jars)

INGREDIENTS:

400g organic strawberries, washed and hulled
200ml double cream / dairy free coconut yoghurt
125g Rude Health Coconut Chia Granola

METHOD:

  1. Cut strawberries into quarters.
  2. In a medium bowl, whisk together the double cream until stiff peaks form.
  3. Place a few pieces of strawberries on the bottom of a jar. Add a very generous spoonful of whipped cream on top of the strawberries. Sprinkle 2 tablespoons of Rude Health Coconut Chia Granola on the whipped cream. Repeat this process to add on a second layer of strawberries, whipped cream and granola.
  4. Repeat the above step for all the jars.
  5. Serve immediately.
