The squirrels at Pip & Nut, makers of our fave nut butter have shared a few of their favourite nut-ritious recipes for you to try at home! Over to you P&N…
We often get asked how to eat our nut butters and the answer is: there are SO many delicious options. Gone are the days of peanut butter being just for toast (although, that being said, a good slice of toast is still hard to beat). Packed full of protein, vitamin E and healthy fats, our nut butters are naturally nutritious and the ideal addition to all sorts of dishes and healthy snacks. Our Peanut Butter is spiked with just a sprinkling of sea salt to give a little savoury kick; while, if you fancy something sweeter, our Coconut & Almond Butter will feel like an indulgent (but not too naughty) treat. Here are a few of our favourite ways to get a bit more creative with nut butter in your kitchen.
Cacao & Peanut Butter Protein Balls
These protein balls are super simple to make and are perfect for quick pre-workout snack or a post-gym treat. They will satisfy your chocolatey craving, just without the sugary slump afterwards, and are packed full of all sorts health-boosting ingredients. Cacao is a fantastic source of antioxidants, essential minerals and heart-healthy fats while our Peanut Butter can help to reduce cholesterol and boost your metabolism.
What you’ll need:
- » ¾ cup raw almonds
- » 1 tbsp cacao powder (you could also use cocoa powder)
- » 12 pitted dates
- » 2 tbsp Pip & Nut Peanut Butter
- » 1-2 tbsp agave syrup (honey or rice malt syrup could also be used)*
Place the dates, cacao powder and peanut butter into a food processor. Blend until the mixture resembles a paste. Add the almonds and pulse until desired chunkiness is achieved (don’t leave it too long or it will turn into liquid). If your mixture is too dry, add 1tbsp of agave syrup and pulse to mix through. If it is still too dry add another tablespoon and pulse again. (The mixture should be a little sticky and roll easily into balls). Use a spoon to roll the mixture into tablespoon sized balls.
*If using fresh medjool dates you will probably find that you will only need a tiny amount of agave syrup – or none at all!
Peanut Butter ‘Nice Cream’
Whoever came up with the idea of whizzing up frozen bananas is a genius. If you haven’t tried ‘nice cream’ yet, you don’t know what you are missing. It tastes like a dessert but banana nice cream can be eaten at any time of day, even for breakfast. Peanut Butter and banana is one of our favourite combinations anyway, but it is particularly good like this. The proteins and healthy fats from the Peanut Butter give you enough calories to give you a big boost of slow-release energy, while the fibre ensures it doesn’t all flood into your blood stream at once. Perfect before a big, busy day.
What you’ll need:
- » 2 frozen bananas
- » 2 tbsp Pip & Nut Peanut Butter (any of our nut butters would taste amazing)
- » Water or almond milk – to help blend
Simply blend everything together in a food processor, adding the water of almond milk a little bit at a time. There are endless variations to this dish – we like to amp ours up by topping it with desiccated coconut, fresh berries and cacao nibs. Serve immediately or put in the freezer for later use.
Coconut and Almond Superfood Smoothie
Nut butters are a great addition to any smoothie if you want something that will give you an extra burst of energy and protein. This Coconut & Almond smoothie is our go-to recipe and one of our favourite ways to refuel after exercising. The natural yoghurt makes this smoothie extra creamy and the oats keep us full for longer – ideal for busy squirrels on the go!
What you’ll need:
- » 500ml skimmed milk
- » 150ml natural yoghurt
- » 3 tbsp Pip & Nut Coconut Almond Butter
- » 2 bananas
- » 1 tbsp flax seeds
- » 2 tsp old fashioned oats
- » 1 tbsp honey (optional)
Grind flaxseeds and oats into a fine powder using a pestle mortar. Add all the ingredients into a food processor until all the ingredients are fully incorporated. Best served cool. Serves 2-3.
